INGREDIENTS
- 2 Large Eggs
- 5/4 Cup Granulated Sugar
- 1 Teaspoon Mixed Spice (All spice works for me. Some might say that I should use more "Old Spice", but that's a different problem.)
- 3/4 Cup Chopped Hazelnuts
- 1/2 Cup Dried Cranberries
- 1/2 Cup Dark Chocolate Chips
- 3/2 Cup Plain Flour
INSTRUCTIONS
- Preheat the oven to 350 degrees.
- Combine the eggs with the sugar in the bowl of a food mixer and mix on medium for around 10 minutes.
- Add the mixed spice and fold in with a spatula or wooden spoon.
- Chop the hazelnuts and add them to the batter with the chocolate chips and the cranberries.
- Add the sifted flour and fold this into the mixture, the mix will be very thick.
- Roll the dough into two 9-inch logs and place onto a parchment covered baking sheet.
- Bake for 25 minutes at 350 degrees in a reasonably clean oven.
- Transfer the loaves to a cutting board, and slice them on the diagonal about 1cm thick.
- Place the slices on the same baking sheet and bake for 5 minutes until crisp, but still pale.
- Let cool on the baking sheet or drying rack.
