Hazelnut, Dried Cranberry, and Chocolate Chip Biscotti
INGREDIENTS
  • 2 Large Eggs
  • 5/4 Cup Granulated Sugar
  • 1 Teaspoon Mixed Spice (All spice works for me. Some might say that I should use more "Old Spice", but that's a different problem.)
  • 3/4 Cup Chopped Hazelnuts
  • 1/2 Cup Dried Cranberries
  • 1/2 Cup Dark Chocolate Chips
  • 3/2 Cup Plain Flour

INSTRUCTIONS
  1. Preheat the oven to 350 degrees.
  2. Combine the eggs with the sugar in the bowl of a food mixer and mix on medium for around 10 minutes.
  3. Add the mixed spice and fold in with a spatula or wooden spoon.
  4. Chop the hazelnuts and add them to the batter with the chocolate chips and the cranberries.
  5. Add the sifted flour and fold this into the mixture, the mix will be very thick.
  6. Roll the dough into two 9-inch logs and place onto a parchment covered baking sheet.
  7. Bake for 25 minutes at 350 degrees in a reasonably clean oven.
  8. Transfer the loaves to a cutting board, and slice them on the diagonal about 1cm thick.
  9. Place the slices on the same baking sheet and bake for 5 minutes until crisp, but still pale.
  10. Let cool on the baking sheet or drying rack.

Do cranberries sound too healthy? On a strict junk food diet? We understand. Here's an option:
Same as above, but ...
  • 3/4 Cup Chopped Hazelnuts
  • 2/3 Cup Dark Chocolate Chips
  • 3 teaspoons of instant dark roast coffee
Add the coffee just after the mixed spice.

For those weirdos that don't like chocolate, we don't understand, but here's an option for you:
Same as above, but ...
  • 3/4 Cup Chopped Pecans
  • 3/4 Cup Dried Cranberries
  • the zest of two oranges
Add the orange zest just after the mixed spice.

... but really?!? You don't like chocolate?
